What's sweet, chocolatey and perfect for St. Patrick's Day? Chocolate Baileys Truffles, of course! In just a few simple steps and one decadent bite you can experience the creamy taste of Ireland. Going back to my family's roots, St. Patrick's Day has always been a time for celebration while finding fun recipes or desserts for our guests to enjoy, and truffles have always been something I've wanted to make! I was really pleased with how they came out and hope you enjoy making them as much as I did.
INGREDIENTS
10oz semi-sweet Guittard chocolate chips
3/4 cups heavy cream
5 tbl Baileys Irish Cream
1 cup unsweetened coca
8 oz white chocolate
1 tbl shortening
Green food coloring
1. Place chocolate chips in an empty bowl, set aside. Bring heavy cream to a boil in a saucepan on the stove. Pour over the chocolate chips, gently stirring until combined and smooth. Stir in Baileys Irish Cream. Cover the bowl in plastic wrap and refrigerate until firm (about 2.5 - 3 hours).
2. Remove the bowl from the fridge and scoop out a small scoop of chocolate (about 3/4 inches), rolling in your hands to form a ball. Next, roll in unsweetened coca powder to coat the truffle.
3. As a garnish, melt white chocolate and shortening in the microwave. Add green food coloring and place in a piping bag. Using a zig-zag motion, pipe the white chocolate onto the truffle and place into a truffle liner. sprinkle with green or gold sprinkles as a finish! Make sure to store in the refrigerator for the truffles to keep their shape.
